SIT30816 Certificate III in Commercial Cookery is for individuals who are seeking entry-level jobs in a commercial kitchen environment at any establishment within the hospitality industry.
Individuals will demonstrate the role of commercial cooks who use a wide range of cookery skills. They use discretion and judgement and have a sound knowledge of kitchen operations. They work with some independence and under limited supervision and may provide operational advice and support to team members.

The SIT30816 Certificate III in Commercial Cookery includes 25 units of competency:

SITHCCC013 – Prepare seafood dishes

SITHCCC018 – Prepare food to meet special dietary requirements
SITHCCC019 – Produce cakes, pastries and breads
SITHCCC020 – Work effectively as a cook
SITHKOP001 – Clean kitchen premises and equipment
SITHKOP002 – Plan and cost basic menus
SITHPAT006 – Produce desserts
SITXFSA001 – Use hygienic practices for food safety

There are no entry requirements for this Qualification however Students are required to undertake a Pre-Training Review and a Language Literacy and Numeracy Assessment.
These will assist with determining suitability into course entry and identification of any support needs.

Eligibility Criteria 1. You must be an Australian Citizen or Permanent Resident or New Zealand Citizen. 2. You must not have completed the same AQF level qualification or higher than the course you wish to enrol in, unless under 20 years of age on 1 January this year. 3. You must not have commenced or be scheduled to commence more than two Victorian Government subsidised courses this year; and 4. You must not be currently enrolled in two or more Victorian Government subsidised courses.
Traineeship incentives may be applicable on full time/ part time basis, subject to eligibility. Enrolment fees apply.
